Chicken Fajitas
Ingredients
- 2 qty chicken breasts
- 1 qty red pepper
- 1 qty orange pepper
- 1 qty green or yellow pepper
- 1 qty onion
- 8 qty flour tortillas
- 4-6 oz monterey jack cheese
- 1 qty avocado
- ½ cup salsa
- ½ cup sour cream
- ⅛ cup fajita seasoning
- 3-4 tablespoon olive oil
- salt (or to taste)
- pepper (or to taste)
Garnish
- 1 qty jalapeno pepper
- 1 bunch fresh cilantro
- 1-2 qty lime
Instructions
- Preheat oven to 350 degrees. Slice peppers, onion, lime, and jalepeno pepper.
- Drizzle olive oil into a cast iron skillet on medium-high heat. Saute peppers and onion with ½ of fajita seasoning until charred. Remove and set aside.
- Season chicken breasts with remaining fajita seasoning, salt, and pepper. Drizzle remaining olive oil into the cast iron skillet and sear chicken for approximately 2-3 min on each side, or until brown in color.
- Place chicken into the oven to finish cooking for approximately 20 minutes, or until the internal temperature is safe. See more guidelines at USDA.gov.
- Cut avocado and mash it into a bowl with chopped cilantro and ½ freshly squeezed lime.
- Shred the Monterey Jack cheese and place all fajita ingredients on a platter for serving. Small bowls should be used for wet ingredients (salsa, sour cream, etc.). Garnish with cilatntro, lime, and jalapeño peppers.
- Warm tortillas for 30 sec each in a skillet on low heat (optional).
- Assemble the fajitas and serve warm. Enjoy!
