Cowboy Potatoes (Breakfast Hash)

Yeeehaw!! Incredibly versatile and seasoned to perfection, this fried skillet potato recipe can be served with additional protein, also known as Breakfast Hash, and topped with your favorite eggs for a nutritious start to your day.

How to Make Cowboy Potatoes


Yukon Gold or Chef potato Red bell pepper Green bell pepper Onion Olive oil Italian seasoning Kosher salt Pepper

Instructions: Step 1

Preheat the oven and chop all ingredients into small pieces.

Begin frying the diced potatoes in olive oil. Stir potatoes so that they are slightly browned on all sides.

Add in the vegetables. Saute for 3-4 minutes, then place into the oven to finish.

Instructions: Step 4

Remove the potatoes from the oven and serve them immediately. Cowboy potatoes are great with eggs. Serve them on top of the skillet, or as a side.
