Cilantro Lime Brown Rice

Cilantro lime brown rice is a comforting side dish to accompany your favorite Mexican inspired cuisine. Use it as a base for chicken (or beef), black beans, corn, pico de gallo, avocado, etc. The flavors marry together and provide a perfect flavor combination!

Ingredients
  

  • 1 cup brown rice
  • 1 cup + 3 tbsp water
  • 1 qty lime
  • ¼-½ cup chopped fresh cilantro
  • 2 tablespoon olive oil

Instructions
 

  • Pour one cup plus 3 tablespoons of water and one cup of brown rice into the Instant Pot. Set timer for 15 minutes on high pressure with the valve closed. *See notes if you would like your rice to have a firmer texture.
  • When timer is finished, wait ten minutes for the Instant Pot to naturally release steam before opening the valve.
  • Fluff rice with a fork. Stir in the juice of one fresh squeezed lime and add chopped cilantro.

Notes

If you prefer a firmer texture of rice, you can add a little less water (one cup) and let the steam naturally release for five minutes.
