Ingredients
  

  • 1 bag Tortilla chips
  • 2 cans Black beans
  • 2 ½ cups Corn (frozen)
  • 4-5 qty Roma tomatoes
  • 1 med Green bell pepper
  • ¼ cup Green onion (diced)
  • 5 qty Limes (juice of)
  • cup Fresh Cilantro
  • ¼ cup Extra virgin olive oil
  • ½ teaspoon Salt (or to taste)
  • ¼ teaspoon Pepper (or to taste)

Instructions
 

  • Open both cans of beans and scoop out 1 ½ cups of frozen corn. Rinse both in a colander, then set them aside to drain.
  • Wash all produce and dice all vegetables. Leave out the avocado until ready to eat.
  • Add all ingredients (except for the avocado) into a mixing bowl and give it a good stir.
  • Refrigerate for at least 30 minutes (better if you can go a full day).
  • To serve, scoop out a generous portion and add freshly sliced avocado. This dip is best served with tortilla chips.
