Crispy Greek Lemon Potatoes Recipe combines Yukon Gold potatoes, lemon juice, garlic, oregano, and olive oil for crispy roasted Greek-style potatoes. In a large mixing bowl, combine the juice of 3 ½ lemons, zest of one lemon, chopped garlic, olive oil, dried oregano, Cavender's Greek Seasoning, kosher salt, and black pepper. Mix well.
Taste the marinade. It should be tangy, flavorful, and well-seasoned. If it tastes under-seasoned, add more salt (¼ teaspoon at a time) until it reaches your desired level of saltiness.
Add the slightly cooled potatoes to the marinade, tossing to coat evenly. Let them marinate for at least 30 minutes, if possible.
Transfer the potatoes and marinade to a large baking dish or roasting pan, spreading them out in a single layer. Add ½ cup of chicken or vegetable broth if desired.
Place the baking dish in the preheated oven and bake for 45-50 minutes, stirring halfway through. For the last 10 minutes, increase the oven temperature to 425°F (220°C) to help the potatoes crisp up.
Once done, remove the potatoes from the oven and let them cool slightly. Serve warm as a delicious side dish. Add remaining lemon juice and thyme as garnish.
