Instructions
Rinse the pinto beans under cold water to remove any debris. Chop the onion and mince the garlic.
Set your Instant Pot to sauté mode until it reaches medium heat. Add the olive oil and chopped onion to the pot and sauté until the onion becomes translucent. Add the minced garlic and saute for one more minute.
Put the rinsed pinto beans, chipotle peppers, adobo sauce, chili powder, ground cumin, oregano, bay leaves, salt, pepper, vegetable cubes, and water into the Instant Pot.
Close the Instant Pot lid and set it to high pressure. Cook the beans for 60 minutes under high pressure. After the cooking time is up, allow the pressure to release naturally for 20 minutes, then carefully perform a quick release. Remove bay leaves and whole chipotle peppers. Serve warm.
