1sheet puff pastry, approximately 9.75” X 10.5”thawed

Instructions
Preheat oven to 400°F (200°C). In a large skillet, melt the butter over medium heat. Add carrots, celery, and onion; sauté for 5–7 minutes until softened. Sprinkle flour over vegetables and stir for another minute.
Add a splash of white wine to deglaze the pan. Stir in chicken broth, thyme, Herbs de Provence, salt, and pepper. Simmer for 5–7 minutes until slightly thickened, then stir in the cream.
Turn off the heat and add cooked shredded chicken and peas (if using). Warm for 3–4 minutes until well combined. Taste and adjust seasoning. Remove and transfer the filling to an 8x8-inch baking dish. Let it cool completely before assembling to prevent a soggy pastry.
Unfold the puff pastry and place it over the top, tucking or sealing the edges. Cut small slits for steam to escape. Brush the top with beaten egg. Bake at 400°F (200°C) for 20–25 minutes or until golden brown and puffed. Cool slightly before serving.
