Work in batches if necessary and use short pulses rather than letting the processor run continuously. Stop when the cauliflower resembles coarse grains of rice. Some variation in size is fine, but you don't want to process it into fine crumbs.

Measure 2½ cups for the recipe. A medium cauliflower may give you more than you need, so save the remainder rather than crowding it into the skillet.

STEP TWO: Sauté the Shallot and Garlic

Heat the olive oil and butter in a 10-inch skillet over medium heat. Add the shallot and cook for 1-2 minutes.

You're looking for softened, translucent shallot without browning. Once it reaches that point, stir in the garlic and cook for about 30 seconds. As soon as you can smell the garlic, you're ready for the cauliflower.

STEP THREE: Cook the Cauliflower Rice

Increase the heat to medium-high and add the cauliflower rice, salt, and black pepper. Toss until the cauliflower is evenly coated, then spread it across the skillet.

Cook uncovered for 5-7 minutes, stirring occasionally. Don't stir continuously. Leaving the cauliflower against the hot surface for short periods gives some pieces an opportunity to turn lightly golden while moisture escapes.

The finished cauliflower should be tender but still have some texture. If there's visible liquid in the skillet, continue cooking uncovered until it evaporates.

STEP FOUR: Finish with Lemon and Herbs

Take the skillet off the heat before adding the lemon juice and parsley. Toss everything together, then add the optional lemon zest if you want stronger citrus flavor.

  • Remove the outer leaves and thick core from the cauliflower and cut the head into florets. Rinse, if needed, and dry thoroughly.
  • Working in batches as needed, add the florets to a food processor and pulse in short bursts until they resemble coarse grains of rice. Avoid overprocessing, which can make the cauliflower too fine and cause it to cook unevenly. Measure 2½ cups cauliflower rice for the recipe and reserve any remaining cauliflower rice for another use.
  • Heat the extra-virgin olive oil and butter in a 10-inch skillet over medium heat. Add the shallot and cook for 1-2 minutes, stirring occasionally, until softened but not browned. Add the garlic and cook for about 30 seconds, until fragrant.
  • Increase the heat to medium-high. Add the 2½ cups cauliflower rice, kosher salt, and black pepper and toss to coat. Spread into an even layer and cook uncovered for 5-7 minutes, stirring occasionally, until tender with some lightly golden bits. Avoid stirring constantly so the cauliflower has an opportunity to brown rather than steam.
  • Remove the skillet from the heat. Add the lemon juice and parsley and toss to combine. Add the lemon zest, if using. Taste and adjust the salt, black pepper, or lemon juice as needed. Serve immediately.
