Instructions
Add the shredded smoked gouda cheese, sour cream, mayonnaise, softened cream cheese, and cayenne pepper directly into the Instant Pot. Mix the ingredients together until well combined.
Set your Instant Pot to the 'Slow Cook' setting. Cover and cook on 'Slow Cook' for 30 minutes, stirring occasionally to ensure the cheese melts evenly.
While the cheese mixture is cooking, heat a skillet over medium heat. Cook the bacon slices until crispy, or according to package directions. Remove the bacon from the skillet, let it cool slightly, then crumble it.
Once the cheese mixture is fully melted and smooth, transfer it to a serving dish. Sprinkle the shredded white cheddar cheese evenly on top.
Optional Baking
Preheat your oven to 375°F (190°C).
Place the baking dish in the preheated oven. Bake for about 10 minutes, or until the top is bubbly and lightly golden.
Add the finely chopped green onions and crumbled bacon (if using) on top of the cheddar.
Serve the dip hot with sliced French baguette on the side.
Notes
Cooking NotesStirring the cheese mixture occasionally while it cooks helps everything melt evenly into a smooth dip. Baking the dip briefly at the end adds extra texture and browning across the top.Tips for Best Results:
Use freshly shredded cheese for smoother melting.
Stir occasionally while slow cooking to prevent sticking.
Add the bacon after baking, so it stays crisp.
Serve the dip hot while the cheese is still smooth and creamy.
How to Know It’s Ready:The dip should look fully melted and creamy with a lightly golden top if baked before serving.
