  • 3 cups smoked gouda cheese shredded
  • ½ cup sour cream
  • ½ cup mayonnaise
  • 8-ounce package cream cheese softened

  • ½ cup shredded white cheddar cheese for topping
  • 2 green onions finely chopped
  • 5 slices bacon cooked and crumbled (optional for vegetarian version)
  • French baguette sliced

Instructions
 

  • Add the shredded smoked gouda cheese, sour cream, mayonnaise, softened cream cheese, and cayenne pepper directly into the Instant Pot. Mix the ingredients together until well combined.
  • Set your Instant Pot to the 'Slow Cook' setting. Cover and cook on 'Slow Cook' for 30 minutes, stirring occasionally to ensure the cheese melts evenly.
  • While the cheese mixture is cooking, heat a skillet over medium heat. Cook the bacon slices until crispy, or according to package directions. Remove the bacon from the skillet, let it cool slightly, then crumble it.
  • Once the cheese mixture is fully melted and smooth, transfer it to a serving dish. Sprinkle the shredded white cheddar cheese evenly on top.

Optional Baking

  • Preheat your oven to 375°F (190°C).
  • Place the baking dish in the preheated oven. Bake for about 10 minutes, or until the top is bubbly and lightly golden.
  • Add the finely chopped green onions and crumbled bacon (if using) on top of the cheddar.
  • Serve the dip hot with sliced French baguette on the side.
