1cupred wineor substitute beef broth
3cupslow-sodium beef broth
2tablespoonsWorcestershire sauce

2bay leaves
1tablespooncornstarch mixed with 1 tablespoon wateroptional, for thickening

Instructions
Pat beef dry and season with salt, pepper, and smoked paprika.
Heat olive oil in a Dutch oven over medium-high heat. Working in batches, brown beef on all sides. Transfer to a plate.
Add onion to the pot and cook until softened, about 5 minutes. Stir in garlic and tomato paste and cook 1 minute.
Pour in red wine, scraping up browned bits. Stir in beef broth, Worcestershire, thyme, and bay leaves. Return beef to the pot. Cover and reduce heat to low. Simmer 1 ½ to 2 hours, until beef is tender.
Remove bay leaves. If a thicker gravy is desired, stir in cornstarch slurry and simmer uncovered 5 minutes.
Garnish with parsley and serve over mashed potatoes.
