Instructions
In a bowl, whisk together two tablespoons of olive oil, two tablespoons of melted butter, garlic, white wine, lemon zest, lemon juice, salt, pepper, and red pepper flakes.
Arrange the peeled and deveined shrimp in a lightly greased 3-quart oval baking dish in a single flat layer with tails pointing outward. Tuck lemon slices between shrimp evenly. Pour the sauce evenly over the shrimp and lemon slices.
In a separate bowl, combine panko breadcrumbs, 3 tablespoon melted butter, 1 tablespoon olive oil, and 1 tablespoon chopped parsley. Toss until crumbs are evenly coated and slightly glossy.
Spoon the breadcrumb mixture evenly over the shrimp. Bake at 400°F (204°C) for 15–18 minutes, or until shrimp are pink and cooked through and the breadcrumbs are golden brown. Broil for 1–2 minutes at the end if desired for extra crispness.
Serve immediately with lemon wedges on the side. Optionally, garnish with fresh parsley just before serving for added color.
