Ingredients
  

  • 2 pounds jumbo shrimp U12–U15, peeled and deveined with tails on
  • 3 tablespoons olive oil divided
  • 5 tablespoons unsalted butter melted, divided
  • 4 garlic cloves minced
  • ⅓ cup dry white wine
  • zest and juice of 1 large lemon
  • ¼ teaspoon red pepper flakes
  • 1 to 1½ lemons thinly sliced (for layering)
  • 1 cup panko breadcrumbs
  • 1-2 tablespoons chopped fresh parsley mixed into crumbs

  • ½ teaspoon kosher salt
  • ¼ teaspoon freshly ground black pepper

Instructions
 

  • In a bowl, whisk together two tablespoons of olive oil, two tablespoons of melted butter, garlic, white wine, lemon zest, lemon juice, salt, pepper, and red pepper flakes.
  • Arrange the peeled and deveined shrimp in a lightly greased 3-quart oval baking dish in a single flat layer with tails pointing outward. Tuck lemon slices between shrimp evenly. Pour the sauce evenly over the shrimp and lemon slices.
  • In a separate bowl, combine panko breadcrumbs, 3 tablespoon melted butter, 1 tablespoon olive oil, and 1 tablespoon chopped parsley. Toss until crumbs are evenly coated and slightly glossy.
  • Spoon the breadcrumb mixture evenly over the shrimp. Bake at 400°F (204°C) for 15–18 minutes, or until shrimp are pink and cooked through and the breadcrumbs are golden brown. Broil for 1–2 minutes at the end if desired for extra crispness.
  • Serve immediately with lemon wedges on the side. Optionally, garnish with fresh parsley just before serving for added color.
