How to Make Shrimp Scampi Without Wine

STEP ONE: Cook the Pasta

Bring a large pot of salted water to a boil and cook pasta until al dente. Before draining, reserve ¼ cup of pasta water—this will help create a silky sauce. Drain and set aside.

In a large skillet over medium-high heat, melt 2 tablespoons of butter with 2 tablespoons of olive oil. Add the shrimp, season with salt and black pepper, and cook 1-2 minutes per side, until pink and opaque.

Return the shrimp to the skillet, then toss in the pasta, Parmesan (if using), parsley, and lemon zest. Melt in the remaining 2 tablespoons of butter, tossing everything over low heat until well combined. Adjust seasoning with salt and black pepper.

  • 1 pound shrimp
  • 8 ounces linguine or spaghetti
  • 4 tablespoons unsalted butter divided
  • 2 tablespoons olive oil
  • 4 cloves garlic minced
  • ¼ teaspoon red pepper flakes optional
  • ¼ cup chicken broth or reserved pasta water
  • 3 tablespoons freshly squeezed lemon juice
  • salt & black pepper to taste
  • 2 tablespoons Parmesan optional

  • 1-2 tablespoons fresh parsley chopped
  • ½ - 1 lemon (zest of) start with ½ and adjust

Instructions

  • Plate immediately, garnishing with extra parsley, lemon zest, or more Parmesan if desired.
