2large sheets lavash breadsuch as Joseph’s flax lavash or similar wrap-style lavash
3tablespoonsolive oil
2teaspoonsza’atar seasoning
1teaspoonsesame seeds
½teaspoonflaky sea salt
Instructions
Preheat the oven to 425°F. Place the lavash on a large cutting board and cut into triangles, squares, or rustic shards using a sharp knife or pizza cutter.
Arrange the lavash pieces in a single layer on two large baking sheets. Brush lightly with olive oil so the surface is evenly coated. Sprinkle the za’atar, sesame seeds, and sea salt evenly over the top.
Transfer the pans to the oven and bake for 4 to 6 minutes, rotating the pans halfway through cooking. The crackers should be lightly golden and crisp around the edges.
Remove the baking sheets from the oven and allow the crackers to cool directly on the pans for about 5 minutes. They will firm up as they cool. Serve with hummus, whipped feta, or other Mediterranean-style dips.
Notes
Cooking NotesThin lavash bread bakes quickly, so keep a close eye on the oven during the final minute to prevent over-browning. Evenly brushing the olive oil helps the seasoning stick and ensures the crackers crisp evenly.Tips for Best Results
Cut the lavash into evenly sized pieces so they bake uniformly.
Rotate the baking sheets halfway through baking for consistent browning.
Let the crackers cool for five minutes so they fully crisp.
Keep the seasoning light so the lavash remains crisp rather than oily.
How to Know It’s ReadyThe crackers should appear lightly golden and feel crisp around the edges. They will become even firmer as they cool on the baking sheet.
