Mini Cream Cheese Puff Pastry Bites combine flaky puff pastry, sweet cream cheese filling, and fresh berries into an easy baked pastry recipe. They work well for brunch recipes, holiday breakfasts, and easy puff pastry desserts. The pastry bakes golden and crisp while the cream cheese center stays soft and creamy.
Roll out each puff pastry sheet on a lightly floured surface. Use a large cookie cutter (about 4 inches in diameter) to cut out 4 circles from each sheet of puff pastry, making a total of 8 circles.
Using a small knife, score a smaller circle about ½ inch inside the edge of each puff pastry circle, being careful not to cut all the way through. Prick the interior of the smaller circle with a fork to prevent it from puffing up.
In a medium bowl, beat together the cream cheese, sugar, and vanilla extract until smooth.
Place about 1 tablespoon of the cream cheese mixture in the center of each puff pastry circle, within the scored area.
Brush the edges of the puff pastry circles with the beaten egg.
Notes
Cooking NotesKeeping the puff pastry cold before baking helps it puff more evenly in the oven. Pricking the center with a fork prevents the middle from rising too much during baking.Tips for Best Results:
Thaw the puff pastry fully, but keep it cold.
Do not cut all the way through when scoring the edges.
Use an egg wash for better browning.
Cool slightly before adding powdered sugar.
How to Know It’s Ready:The pastry should look puffed and golden while the cream cheese center stays lightly set.
