Imagine biting into a flaky, golden pastry filled with a luscious cream cheese center and topped with fresh fruit—pure bliss! These sweet treats are perfect for a weekday breakfast or any special occasion.
Roll out each puff pastry sheet on a lightly floured surface. Use a large cookie cutter (about 4 inches in diameter) to cut out 4 circles from each sheet of puff pastry, making a total of 8 circles.
Using a small knife, score a smaller circle about ½ inch inside the edge of each puff pastry circle, being careful not to cut all the way through. Prick the interior of the smaller circle with a fork to prevent it from puffing up.
In a medium bowl, beat together the cream cheese, sugar, and vanilla extract until smooth.
Place about 1 tablespoon of the cream cheese mixture in the center of each puff pastry circle, within the scored area.
Brush the edges of the puff pastry circles with the beaten egg.
