This homemade pumpkin loaf blends pumpkin puree, cinnamon, and cloves into a perfectly moist bread that’s ideal for make-ahead breakfasts or afternoon snacks.
Optional: ½ cup chopped nuts or mini chocolate chips
Instructions
Preheat your oven to 350°F (175°C). Grease and flour two 9x5 inch loaf pans or line them with parchment paper.
In a large bowl, whisk together the flour, baking soda, baking powder, pumpkin pie spice, ground cloves, cinnamon, and salt.
In another bowl, beat the eggs. Add the sugar, vegetable oil, pumpkin puree, water, sour cream, and vanilla extract. Mix until well combined.
Gradually add the wet ingredients to the dry mixture, stirring just until combined. Do not overmix. If using, fold in the chopped nuts or chocolate chips.
Divide the batter evenly between the prepared loaf pans. Bake in the preheated oven for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
Allow the loaves to cool in the pans for about 10 minutes before removing to a wire rack to cool completely.
