This dish is a classic Italian-American skillet meal that trades the usual marinara for a light, garlicky white wine sauce. The combination of pan-seared Italian sausage and sautéed peppers simmered in white wine creates a rich broth that pairs perfectly with a piece of crusty bread. We love this because it's quick, full of flavor, and uses ingredients we almost always have on hand.

Why We Love This Recipe

  • Quick and Easy: On the table in 35 minutes, start to finish.
  • One-Pan Dinner: Fewer dishes, more flavor.
  • Savory & Fresh: The wine sauce adds depth without being heavy.
  • Flexible: Serve with bread, over pasta, or even on hoagie rolls.

Italian Sausage and Peppers in White Wine Sauce Ingredients

This dish uses easy-to-find ingredients, most of which you probably already have. Here’s what you’ll need:

  • Sweet Italian Sausage: We like to cut them into large chunks for more seared surface area. Spicy works too!
  • Red, Yellow, and Green Bell Peppers: A colorful mix adds both sweetness and visual appeal. Keep the pieces large so they hold up during cooking.
  • White Wine: We use a dry wine like Pinot Grigio.
  • Chicken Broth: Adds depth and helps balance the acidity of the wine. Don’t skip the reduction step. Letting the liquid simmer down concentrates the flavor.
  • Onion: We prefer sweet or yellow onions for mellow flavor.
  • Garlic: A few cloves go a long way.
  • Italian Seasoning: A pantry staple that ties it all together.
  • Olive Oil, Salt, and Pepper: Basic, but essential.

A full ingredient list with exact measurements can be found in the recipe card below.

Substitutions & Variations

  • Italian Sausages: Use turkey sausage or chicken sausage for a leaner option.
  • White Wine: Substitute with chicken broth if you prefer not to use alcohol.
  • Bell Peppers: Use any variety of sweet peppers or even add some spicy peppers for a kick.

How to Make Italian Sausage and Peppers in White Wine Sauce

STEP ONE: Prepare the Sausages

Season the sausage portions with salt and pepper. Heat 2 tablespoons of olive oil in a skillet over medium heat.

Sear the sausages until they develop a brown crust, about 5-7 minutes. Remove the sausages from the skillet and set them aside.

STEP TWO: Prepare the Vegetables

In the same skillet, add more olive oil if needed. Add the bell peppers and onion, season with a pinch of salt, and cook until they are slightly charred and tender, about 5-6 minutes. Add the garlic and cook for an additional 1 minute, until fragrant.

STEP THREE: Deglaze with Wine and Broth

Pour in the white wine and chicken broth. Scrape the pan to lift all the brown bits.

Bring to a boil and let the liquid reduce by half, about 5 minutes.

STEP FOUR: Combine and Simmer

Return the sausages to the skillet, nestling them among the peppers. Sprinkle with Italian seasoning.

Reduce the heat to low, cover, and simmer until the sausages are cooked through and reach an internal temperature of 165°F, about 6-8 minutes.
