Ingredients
  

Mango Slaw

  • 1ยฝ cups green cabbage shredded
  • 1ยฝ cups purple cabbage shredded
  • 1 large ripe mango thinly sliced (use about 1 heaping cup if it's oversized)
  • 1 large carrot shredded or julienned
  • 2 green onions thinly sliced
  • ยผ cup fresh cilantro chopped

Instructions
 

  • In a large bowl, whisk together the lime juice, honey, apple cider vinegar, oil, salt, and pepper. Taste and adjust seasoning.
  • In the same bowl combine the green and purple cabbage, mango, carrot, green onions, cilantro, and jalapeรฑo.
  • Toss until everything is well coated. Let it sit for at least 10-15 minutes before serving so the cabbage softens slightly and the flavors blend.
