Instructions
 

  • Preheat the oven to 375ยฐF. In a bowl, stir together the diced tomatoes, garlic, olive oil, balsamic vinegar, salt, pepper, and oregano. Let the mixture rest at room temperature for 15 to 20 minutes to develop flavor. Just before serving, fold in the Parmesan and basil.
  • Pat the chicken dry and pound to an even ยพ-inch thickness if needed. Season both sides evenly with salt, pepper, Italian seasoning, and garlic powder. Heat olive oil in a 12-inch oven-safe skillet over medium-high heat. Sear the chicken undisturbed for 4 to 5 minutes until golden, then flip, add the butter, and spoon the melted butter over the tops for 1 to 2 minutes.
  • Transfer the skillet to the oven and roast for 5 to 8 minutes, or until the internal temperature reaches 160-162ยฐF in the thickest part. Remove from the oven and let the chicken rest in the skillet for 5 minutes, allowing the temperature to rise to 165ยฐF. Spoon the Parmesan tomato mixture over each breast and serve immediately.
