  • Preheat the oven to 425ยฐF. Place the potato wedges directly on the 18ร—13-inch sheet pan. Drizzle with 2 tablespoons olive oil, then sprinkle with about half of the Italian seasoning, garlic powder, salt, and black pepper.
  • Toss the potatoes directly on the pan until they are evenly coated. Spread them apart into a single layer and roast for 15 minutes, until they begin to soften and brown.
  • Cut the Italian sausage links into halves. Remove the sheet pan from the oven and add the sausage pieces, onion wedges, and halved mini peppers. *See optional searing step below.
  • Drizzle the remaining 1-2 tablespoons olive oil over the ingredients. Sprinkle with the remaining Italian seasoning, garlic powder, salt, and black pepper, then gently toss everything on the pan. Spread back into a single layer.
  • Return the sheet pan to the oven and roast for 20-25 minutes, stirring once halfway through, until the potatoes are deeply golden and the sausage is browned and fully cooked. The sausage should reach an internal temperature of 160ยฐF when checked with an instant-read thermometer.
  • * Optional Step: Sear the sausage pieces in a skillet over medium-high heat with a little olive oil for 2-3 minutes per side, just until colored but not fully cooked. Add to the sheet pan and roast as directed. Oven time may be a few minutes shorter.
