Why We Love This Recipe

  • Rich Onion Gravy: Slow braising transforms simple onions and broth into a savory gravy perfect for spooning over mashed potatoes or rice.
  • Hands-Off Cooking: After a quick stovetop sear, the oven does most of the work while the pork chops slowly become tender.
  • Comfort Food Flavor: The flour coating thickens the broth naturally while the pork cooks, creating a classic smothered pork chops taste.
  • Family-Friendly Dinner: Simple pantry ingredients and familiar flavors make this recipe a dependable meal everyone enjoys.

Key Ingredients

Here's everything you'll need to make these juicy smothered pork chops.

A labeled image of everything needed to make smothered pork chops with gravy in the oven.
  • Bone-In Pork Chops: Thick bone-in chops are best for this recipe because they stay juicy during the long cooking time and develop more flavor while braising.
  • All-Purpose Flour: Lightly coating the pork chops helps create a golden crust during searing and contributes to the gravy as the pork cooks.
  • Cooking Oil: A neutral oil works well for searing the pork chops and building flavor in the skillet before baking.
  • Onion: Thick slices soften slowly in the oven and release flavor into the broth, creating the classic onion gravy base.
  • Low Sodium Beef Broth: This forms the base of the gravy and adds rich savory flavor that complements the pork.
  • Garlic Powder: Adds depth to the seasoning without overpowering the natural flavor of the pork chops.
  • Onion Powder: Enhances the onion flavor already present in the gravy.
  • Paprika: Adds mild warmth and subtle color to the pork chops during cooking.
  • Cornstarch: Optional, for thickening the gravy.

A full ingredient list with exact measurements can be found in the recipe card below.

Substitutions & Variations

  • Beef Broth: Chicken broth can be used for a lighter gravy flavor if preferred.
  • All-Purpose Flour: Use cornstarch slurry at the end of cooking for a gluten-free thickening option.
  • Bone-In Pork Chops: Boneless pork chops work, though thick cuts help prevent dryness.
  • Flavor: Add sliced mushrooms along with the onions for a deeper, savory gravy.
  • Kid-Friendly: Serve the pork chops over buttered noodles.

Storage

Leftover smothered pork chops can be stored in an airtight container in the refrigerator for up to 3 days. The dish can also be frozen for up to 2 months if cooled completely before freezing. Reheat gently in a covered skillet or oven so the gravy stays smooth and the pork remains tender.

Smothered Pork Chops with Gravy FAQs

Can you cook smothered pork chops in the oven?

Yes, smothered pork chops cook very well in the oven because the steady heat allows the pork to braise slowly in gravy. After searing the pork chops, they are placed in a casserole dish with onions and broth and baked until tender. This oven method requires less monitoring than stovetop cooking.

Why are my baked pork chops tough?

Smothered pork chops usually become tough when they have not been cooked long enough. Thick pork chops require time to braise so the muscle fibers relax and soften. Cooking them slowly while covered in the oven at a low temperature allows the broth and onions to tenderize the meat and build a flavorful gravy.

What gravy goes best with pork chops?

Onion gravy is the most traditional gravy served with smothered pork chops. It forms as the onions cook slowly in broth with the pork chops, creating a sauce that thickens naturally. This style of gravy pairs well with mashed potatoes, rice, or buttered noodles.

Can pork chops with onion gravy be made ahead of time?

Yes, this recipe can be prepared ahead because the flavors often deepen as it rests. After cooking, allow the dish to cool slightly before refrigerating. Reheat gently in the oven or on the stovetop so the gravy stays smooth and the pork chops remain tender.

How do you thicken pork chop gravy?

Gravy can thicken naturally as the braising liquid reduces during cooking. If a thicker gravy is desired, whisk a small amount of cornstarch with cold water and stir it into the hot gravy during the final minutes of cooking. The mixture will quickly thicken into a smooth sauce.

Notes

Cooking Notes:
Searing the pork chops first builds flavor that carries into the gravy as the dish braises. Slow oven cooking helps the pork become tender while the onions soften and create a rich sauce.
Tips for Best Results:
  • Sear the pork chops until golden before baking to build deep flavor.
  • Use thick pork chops so they stay juicy during the long braise.
  • Cook the dish covered first so the pork tenderizes properly.
  • Let the pork chops rest briefly before serving so the gravy settles.
How to Know Itโ€™s Ready:
The pork chops should be tender enough to cut easily with a fork and the gravy should look slightly thickened and glossy.
