STEP ONE: Mix the Patty Ingredients

In a large bowl, combine the ground turkey, garlic, spinach, feta, breadcrumbs, egg, red onion, and seasonings.

Use clean hands to gently mix everything until just combined (avoid overmixing to keep the burgers tender).

Form the mixture into 5 equal-sized patties, each about ¾-inch thick.

Place them on a plate or tray and refrigerate for 15 minutes.

STEP FOUR: Finish in the Oven

Ingredients
  

  • 1 pound ground turkey
  • 2 cloves garlic minced
  • 1½ cups fresh spinach chopped
  • ½ cup feta cheese crumbled
  • ½ cup panko breadcrumbs
  • 1 large egg
  • ¼ cup red onion finely chopped
  • 1 teaspoon dried oregano
  • ½ teaspoon onion powder
  • 1 tablespoon fresh dill chopped
  • ½ teaspoon kosher salt
  • fresh cracked pepper, to taste
  • olive oil spray for the pan or parchment

Instructions
 

  • Preheat the oven to 375°F. Line a baking sheet with parchment paper or foil and lightly spray with olive oil to prevent sticking.
  • In a large mixing bowl, combine the ground turkey, minced garlic, chopped spinach, crumbled feta, breadcrumbs, egg, red onion, kosher salt, oregano, onion powder, and dill. Mix with clean hands or a spatula until just combined. Try not to overwork the mixture.
  • Divide the mixture into 5 equal portions and form into patties about ¾-inch thick. Place them on a plate and chill for 15 minutes to help them firm up and hold their shape during cooking.
  • Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Once hot, add the chilled patties and sear for 2–3 minutes per side, until a golden crust forms. You’re just browning them, not cooking them through.
  • Transfer the seared patties to the prepared baking sheet. Bake for 10–12 minutes, or until the internal temperature reaches 165°F in the center. Let rest 3–5 minutes before serving.

Storage Store leftover turkey spinach and feta burgers in an airtight container in the fridge for up to 3 days.
Freeze Freeze raw patties on a parchment-lined baking sheet, then transfer to a Ziploc bag once frozen. They can be cooked from frozen with an additional 5 minutes of cooking time.
