  • 1 can 15 oz garbanzo beans drained and rinsed
  • 1 English cucumber diced
  • 3 Roma tomatoes diced
  • ½ cup Kalamata olives pitted and halved
  • ½ cup feta cheese, crumbled plus more to taste
  • ¼ cup pepperoncini peppers sliced
  • 1 teaspoon oregano dried
  • 1 tablespoon dill fresh
  • 2 tablespoon red wine vinegar
  • 1 lemon juice of
  • 3 tablespoon extra virgin olive oil
  • salt and pepper to taste

Instructions
 

  • In a large mixing bowl, combine the garbanzo beans, diced cucumber, diced tomatoes, Kalamata olives, feta cheese, and pepperoncini peppers.
  • Sprinkle the dried oregano and fresh dill over the salad.
  • In a small bowl, whisk together the red wine vinegar, lemon juice, and extra virgin olive oil to create the dressing.
  • Pour the dressing over the salad and toss well to coat all the ingredients evenly.
  • Season with salt and pepper according to taste.
  • Serve immediately with additional feta (if desired), or chill in the refrigerator before serving to allow flavors to develop.
