This Mediterranean Salad has an amazing mix of flavors if you crave foods from the Mediterranean. Loaded with beans, veggies, and my favorite cheese, it will fill you up quickly and give you the energy to keep going. Everything is betta with feta!

INGREDIENTS
- Garbanzo beans - People also refer to them as chickpeas. These beans are a healthy low-budget ingredient found in many Mediterranean dishes.
- Cucumber - An English cucumber was used in this recipe. Many people prefer this over the seeded variety.
- Tomatoes
- Kalamata olives - If you only have the seeded variety, you can peel them away from the pit.
- Feta cheese
- Pepperoncini peppers
- Oregano
- Dill
- Red wine vinegar
- Lemon
- Extra virgin olive oil
- Salt
- Pepper

Ingredients

Dressing
- Extra virgin olive oil

Instructions
Dressing
- In a small bowl, whisk together the dressing ingredients. Set aside.
Salad
- Wash produce and cut into small salad sized portions. Drain beans.
- Assemble salad with all ingredients.
- Drizzle prepared dressing on top.
- Gently toss the salad. Serve chilled.
