Cook and cool the cheese tortellini. Slice the roasted red pepper into 1-inch pieces.

Fold three slices of salami together to create a rose shape.

Thread the skewers in the following order: cooked tortellini, fresh basil leaf, cherry tomato, salami rose, black olive, roasted red pepper, marinated artichoke heart, marinated mushroom, another salami rose, marinated mozzarella ball, fresh basil leaf, and pepperoni cube.

  • Wooden skewers (soaked in water)
  • Cooking pot
  • Knife
  • Cutting board

Ingredients
  

  • 10 cheese tortellini cooked and cooled
  • 10-15 fresh basil leaves
  • 10 cherry tomatoes
  • 10 marinated mushrooms
  • 10 marinated artichoke hearts halved
  • 10 marinated mozzarella balls
  • ½ to 1 roasted red pepper cut into 1-inch pieces
  • 10 black olives
  • 60 slices salami
  • 10 pepperoni cubes
  • dressing from marinated mozzarella balls

Instructions
 

  • Soak wooden skewers in water for 30 minutes to prevent burning.
  • Cook and cool 10 cheese tortellini according to package instructions.
  • Create two salami roses for each skewer by folding three slices of salami together for each rose.
  • Thread a skewer in the following order: One cooked tortellini, one fresh basil leaf, one cherry tomato, one salami rose (with three slices, one black olive, one piece of roasted red pepper, one marinated artichoke heart, one marinated mushroom, another salami rose (with three slices), one marinated mozzarella ball, one fresh basil leaf, one pepperoni cube.
  • Repeat the process for the remaining skewers and arrange them on a platter.
  • Drizzle dressing from marinated mozzarella balls over the completed skewers.
