How to Make Blueberry Turnovers

STEP 1: Prepare the Oven and Blueberries

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

In a medium bowl, mix together the blueberries, granulated sugar, cornstarch, and lemon juice until the blueberries are well coated.

STEP 2: Prepare the Puff Pastry

On a lightly floured surface, unfold the puff pastry sheets and cut each sheet into 4 equal squares.

Place about 2 tablespoons of the blueberry mixture in the center of each square

STEP 3: Assemble

In a small bowl, mix the beaten egg with water. Brush the edges of the pastry squares with the egg wash.

Fold each square into a triangle, pressing the edges together with a fork to seal.

Place the turnovers on the prepared baking sheet. Brush the tops with the remaining egg wash and sprinkle with coarse sugar if desired.

Bake for 15-18 minutes, or until the turnovers are golden brown and puffed. Serve warm.

  • 1 package 2 sheets puff pastry thawed
