  • Salad tongs
  • Colander
  • Oil and vinegar dispensers
  • Grill or Grill pan

Ingredients
  

  • 4 cups spinach and arugula mix
  • 2 peaches halved and pitted
  • ¼ red onion thinly sliced
  • ½ cup blueberries
  • ¼ cup walnuts toasted
  • ¼ cup goat cheese crumbled
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • Salt and pepper to taste

Instructions
 

  • Preheat your grill to medium-high heat.
  • Brush the peach halves with 1 tablespoon of olive oil.
  • Place the peaches on the grill, cut side down, and grill for 3-4 minutes until grill marks appear. Flip and grill for another 2-3 minutes. Remove from grill and let cool slightly.
  • Slice grilled peaches into wedges.
  • In a large salad bowl, combine the spinach and arugula mix, grilled peach wedges, red onion slices, blueberries, and toasted walnuts.
  • Sprinkle crumbled goat cheese over the salad.
  • In a small bowl, whisk together the remaining 1 tablespoon of olive oil and balsamic vinegar. Season with salt and pepper to taste.
  • Divide the salad among plates and serve immediately.
