    INSTRUCTIONS

How to Make Creamy Cucumber Radish Salad Recipe

    STEP ONE: Prepare the Dressing

In a mixing bowl, combine the Fage Greek yogurt, mayonnaise, apple cider vinegar, minced garlic, sugar, dill, and a squeeze of fresh lemon juice. Whisk the ingredients together until well blended. Set aside.

    STEP TWO: Prepare the Vegetables

Wash and dry the English cucumbers and radishes. Slice the cucumbers into thin rounds. Thinly slice the radishes. Finely slice the red onion. See more information below about how to prepare radishes for a salad.

    STEP THREE: Combine the Ingredients

Add the sliced cucumbers, radishes, and red onion. Gently toss them together to evenly distribute the ingredients.

    STEP FOUR: Dress the Salad

Toss the dressing with the cucumber, radish, and onion mixture. Use a spoon or spatula to coat the vegetables thoroughly with the creamy dressing.

STEP FIVE - Season and chill:

Sprinkle more fresh dill leaves over the salad. Season generously with freshly cracked black pepper. Add salt to taste.

Let the salad chill in the refrigerator for at least 30 minutes to allow the flavors to meld together.

    SUBSTITUTIONS

    • Yogurt - Instead of Fage Greek yogurt, you can use any other brand or type of Greek yogurt available or sour cream.
    • Diet - If you prefer a lighter dressing, you can use Greek yogurt alone without adding mayonnaise. To make the Creamy Cucumber Radish Salad vegan-friendly, you can replace the Fage Greek yogurt and mayonnaise with dairy-free alternatives. Opt for a plain unsweetened vegan yogurt, such as almond, soy, or coconut-based yogurt. You can also use vegan mayo made from plant-based oils.
    • Herbs - Fresh parsley can be used as a substitute for dill, though it will alter the flavor profile.

    VARIATIONS

    • Add-ins - Add some cherry tomatoes for an extra burst of sweetness or thinly sliced red bell pepper for added color and crunch. For a protein boost, top the salad with grilled chicken or shrimp, or crumble some feta cheese on top for a tangy and salty element.

    STORAGE

The Creamy Cucumber Radish Salad can be stored in an airtight container in the refrigerator for up to 2 days. However, it's best enjoyed fresh for optimal flavor and crunch.

This dish is not freezer friendly.

Note: Refer to Top Tips below for more storage and reheating tips.

    TOP TIPS

English cucumbers work well for this recipe due to their mild flavor and thin skin. If using regular cucumbers, peel them before slicing.

To reduce the water content of the cucumbers, sprinkle them with salt and let them sit for a few minutes. Then rinse and pat dry before adding to the salad.

Prep the vegetables and dressing in advance, but combine them just before serving to maintain optimal freshness.

Adjust the amount of dill, lemon juice, sugar, and salt according to your taste preferences.

HOW TO PREPARE RADISH FOR SALAD

    1. Select fresh radishes by choosing radishes that are firm, brightly colored, and free from any blemishes or soft spots. The smaller radishes tend to be milder in flavor, while larger ones can be more peppery.
    2. Wash the radishes by rinsing them thoroughly under cold running water to remove any dirt or grit. Gently scrub them with a vegetable brush to ensure they're clean.
    3. Cut off the green leafy tops and the roots at the bottom of the radishes. Discard the tops or save them for another use, such as garnishing or sautéing.
    4. Slice or dice the radishes. You can either slice the radishes into thin rounds or dice them into small cubes. A mandoline or a sharp knife can be used to achieve thin and even slices.
    5. If you want to reduce the spiciness of the radishes, you can soak them in a bowl of cold water for about 15-20 minutes. This can help mellow their flavor slightly. Drain and pat dry before adding them to the salad.
    6. Add the sliced or diced radishes to your salad bowl, along with other desired vegetables, greens, or ingredients. Toss gently to combine.
Can I use regular cucumbers instead of English cucumbers?

Yes, you can use regular cucumbers. Just make sure to peel them before slicing.

Can I make the dressing ahead of time?

Absolutely! The dressing can be prepared ahead and stored in the refrigerator until you're ready to toss it with the vegetables.

How do you prepare radishes for a salad?

To prepare radish for a salad, wash and trim the radishes, removing the greens and roots. Slice or dice the radishes according to your preference, and incorporate them into the salad along with other ingredients.

Can I use regular yogurt instead of Greek yogurt in the dressing?

While Greek yogurt is recommended for its creamy and tangy consistency, you can substitute it with regular yogurt if needed. Keep in mind that regular yogurt tends to be thinner, so the dressing may be slightly less creamy. It also has a different flavor profile.
