  • Tahini: A paste made from sesame seeds, essential for that authentic nutty taste.
  • Garlic: Freshly minced garlic adds a bold, zesty kick to the hummus.
  • Lemon Juice: Freshly squeezed lemon juice adds a bright, tangy flavor, balancing the richness of the tahini and olive oil.
  • Olive Oil: Extra virgin olive oil helps create a smooth, luscious texture and adds a fruity, peppery note.
  • Salt: Enhances all the flavors and ensures the hummus is well-seasoned.
  • Optional Toppings: Toasted pine nuts add a delightful crunch, and a sprinkle of paprika adds a touch of smokiness and color.

A full ingredient list with exact measurements can be found in the recipe card below.

How to Make Greek Hummus with Lemon, Garlic, and Pine Nuts

STEP ONE: Prepare the Garbanzo Beans

Wash the garbanzo beans thoroughly, removing any small stones or debris. Add the beans and 4 cups of water to the Instant Pot. Close the lid, set the valve to sealing, and cook on high pressure for 60 minutes. Allow the pressure to release naturally for 20-30 minutes, then quick release any remaining pressure.

Drain most of the cooking juice from the cooked beans, then refrigerate them in a for at least 2 hours.

STEP TWO: Blend the Ingredients

In a food processor, pulse the minced garlic, lemon juice, and tahini until well combined. Add the cooled garbanzo beans (fully drained) and salt, then blend until smooth.

While the processor is running, slowly pour the olive oil through the top to create a creamy, emulsified texture. Add 3-5 ice cubes to the mixture (this helps to achieve a creamier hummus).

STEP THREE: Blend Until Smooth

Blend until smooth, adding a little more oil if necessary to reach the desired consistency. Taste and adjust seasoning if needed, adding more salt, lemon juice, or garlic to suit your preference.

STEP FOUR: Serve

Transfer the hummus to a serving bowl. Drizzle with additional olive oil and sprinkle with toasted pine nuts and paprika, if desired.
